Green Peas- A surprising source of protein!!

Who would have thought that the humble green pea would be a power food? One cup of green peas has about 3grams of protein, is laden with all the antioxidant and anti-inflammatory benefits that you can imagine. It's also rich in B-1, B- 2 and B- 6 vitamins.

The food pyramid recommends 2 to 3 servings of protein per day and adding this inexpensive wonder-food is a good low-fat option to meet those requirements. Green peas are so versatile- you can have them as a soup, sprinkle them on a salad, stir them into a vegetable stew or serve along with rice as a pilav. You can combine peas with other nutritional powerhouses like red cabbage, french beans or carrots as a simple vegetable saute.

Frozen green peas are just as good as the fresh ones- just be sure to rinse them well before using since sodium is used as part of the freezing process. That way,you don't end up consuming unnecessary sodium.
